MERINGUE
1/8tsSalt
3 Egg whites
6tbSugar
CUSTARD
1 1/2cMilk
1/2cLight cream
1/4tsSalt
4tbSugar
6 Egg yolks
1tsVanilla extract

Beat egg whites until foamy. Add 1/8 teaspoon salt, then 6 tablespoons sugar gradually, continuing to beat until stiff. Drop by heaping tablespoonfuls into 1/2 inch of boiling water in shallow baking pan. Bake in preheated slow oven (325) for 10 minutes. Carefully remove meringues from water and let stand until cold.

Meanwhile scald milk and cream in top part of double boiler over hot water or in a heavy saucepan. Beat egg yolks slightly, just enough to mix. Stir in 1/4 teaspoon salt and remaining sugar, then slowly add the heated milk and cream. Return immediately to top part of double boiler, over hot, not boiling water and cook, stirring constantly, until thick enough to coat a metal spoon. Cool; add vanilla. Cover and chill. Serve topped with the meringue "islands." Makes 4 servings
